Lentil and Rice Tostada

A Lebanese staple with a school friendly twist, our lentils and rice was created by Foodscapes’ very own Patrick Michaels’ grandmother who hailed from Lebanon and created this authentic recipe. Naturally, we adapted the recipe to fit American tastes, lowered the sodium and recommend preparing it on a tostada to create a Lebanese variant on a classic.

Here is an alternative way to serve a Mediterranean classic that has proven to be a favorite among kids everywhere - our low sodium lentils and rice in a tortilla wrap with classic tortilla toppings. Lentils and rice takes the place of typical meat options or other legumes, and delivers nutrition in healthier, nutritious way.
